TRAVELLERS DISTILLERY 12YO
Rum from the Travellers Distillery in Belize is produced in a traditional column still using local molasses, fermented and distilled in a triple column continuous still, aged in Belize city.
On the nose, bananas with charred oak, pecan nuts and vanilla; a medley of tropical fruits with thick, creamy caramel notes and strong coffee.
In the mouth; delicious creamy banoffee pie with brown sugar; an abundance of rich oak and golden syrup, honey and burnt sugar. Sweet with a slight hint of salt and raspberry aftertaste.
FOUR SQUARE DISTILLERY 14YO
Foursquare Distillery is based in Barbados and is one of the most modern rum distilleries in the world. Its rums are matured in small American white oak ex-Bourbon casks in huge open-sided warehouses, most of which are sourced from the George Dickel distillery in Tennessee.
On the nose, deliciously rich and malty with fragrant vanilla and Christmas cake. Toffee apple and coffee coming through with undertones of dense oak and buttery molasses.
In the mouth, toasted oak with cigar and coffee bean bitterness developing into burnt notes of spiced fruit, thick treacle and a subtle note of camphor; a touch of smoke lingers with a long sweet finish.
DIAMOND DISTILLERY 16YO
The Diamond Distillery is the last surviving rum distillery in Guyana and produces characterful distillates that cannot be reproduced elsewhere. This is because the distillery’s Port Mourant double wooden pot still, Versailles single wooden pot still, and Enmore Wooden Coffey stills are the only remaining wooden stills left in the entire world.
On the nose, fruity with red cheeries and dates; coconut with ripe bananas and sweet melon; apricots with a hint of coffee beans developing into oak spices.
In the mouth, bananas with pineapple rind; molasses and sticky brown sugar; bitter dark chocolate and connamon, bursting with dried topical fruit peels and gently spiced.
BELLEVUE DISTILLERY 21YO
Bellevue distillery is in the heart of the largest sugarcane plantation of Marie-Galante and the largest distillery in Guadeloupe. It is also the first eco-friendly distillery in the Caribbean and recognised as the most modern distillery in the French West Indies.
On the nose, ripe bananas with spiced ginger sweetness; molasses and muscovado sugar, milk chocolate marzipan with nutmeg fading to sandalwood and fruit jam notes.
In the mouth, pleasingly sweet bananas and roasted pineapples; fruit jam, dried figs and ginger with a long lingering dry peppery finish. A delight for lovers of sherry matured whisky.
INDIANA BOURBON, SINGLE CASK WHISKEY
On the nose, fresh vanilla, spicy cloves, oodles of rye with a touch of cereal marzipan.
In the mouth, an intense warming rye with a hint of white pepper, dark chocolate, almond paste and a generous helping of maple syrup with subtle herbal notes.
An impressive finish with lingering mint and freshly cut cedar notes and a touch of mature dried fruits.
